Quick Meal Recipes
Thank you, Teri Pearson (our sweet office lady), for this great idea of posting recipes for those nights when we're just too busy to spend hours preparing meals. The following quick meal ideas were shared by the families of the 2008/2009 school year.
*Easy Chicken Pot Pie ~Debra Montez (Anthony's Mom)
1 c. cubed cooked chicken (boil after cubing)
1 c. frozen mixed vegis (thawed)
1 can Campbell's Soup Cream of Potato
1/8 tsp. pepper
3/4 c. milk
1 c. Bisquick Baking Mix
1 egg
Preheat oven to 400'degrees. Use a 9" pie plate. Mix chicken,, vegies, soup, pepper, and 1/4 cup of the milk (save the other portion of milk). Mix remaining milk, egg & Bisquick. Pour over chicken mixture. Bake 30 minutes or until golden brown. Serves 4. Sometimes I cook some "quickie" rice too. Pour some of the chicken mix over the rice! Yummy for chilly nights!
*Broccoli Chicken Casserole ~Debbi Carter (Corey's Mom)
1 bag frozen broccoli pieces
1 can cream of chicken soup
1 can cream of celery soup
8 oz. sour cream
2 c. cooked, cubed chicken
2 c. cooked Stove-top stuffing mix
Mix all ingredients together in a casserole dish, top with stuffing, and bake, uncovered, till hot and bubbly.

*Fish Stick Sandwiches ~Tiffany Olson (Isaac O.'s Mom)
Fish sticks (frozen pkg.)
Hamburger buns
Cheese slices
Lettuce
Tartar sauce (see tartar sauce recipe below) or ketchup
Lemon juice and/or malt vinegar
Cook fish sticks according to package directions. When finished, top lower half of bun with tartar sauce, 4 or 5 fish sticks, drizzle with lemon juice, malt vinegar, cheese, lettuce, more tartar sauce, and top half of bun. Voila! Homemade McDonald's Filet-o-Fish! I usually keep these ingredients on hand. I always make my own tartar sauce while the fish sticks are in the oven--only takes 5 minutes. Tartar Sauce: 1/2 c. mayo, 2 T. finely chopped minced onion, 1T. pickle relish, 2 tsp. lemon juice, 2 tsp. horseradish, 1/2 tsp. dillweed, 1/2 tsp. parsley--Mix all together.

*Steak with Greens & Balsamic Mushrooms ~Colleen Greer (Ethan's Mom)
2T. olive oil
1lb. flank steak
salt & pepper
1lb. mushrooms (quartered)
1T. balsamic vinegar
1/4 c. heavy cream
6 c. greens
4 green onions, sliced
Heat 1 T. oil in large skillet over medium heat, season steak to taste. Cook to desired doneness 3 to 5 minutes per side, let rest 5 min. before slicing. In skillet, heat remaining oil, add mushrooms and season. Cook until tender & browned, 5 to 6 minutes. Stir in vinegar, remove from heat & stir in the cream. Divide greens, steak & mushrooms among plates, sprinkle with green onions. Takes about 20 minutes.

*My best "in a hurry" suggestion is more than just one main meal idea. It's something that helps for many meals. When we go to Costco and purchase the bulk fresh ground beef, instead of dividing and freezing it, we cook all of it up. Then we drain and rinse it. Once it is cooled, we put it in Ziploc freezer bags. 2 cups is equal to a pound (tested first with 1# from grocery store). We date and freeze the bags. Then anytime we have a night that we want tacos, spaghetti, chili, (even Hamburger Helper!) the beef portion is already cooked and ready to go. ~Tiffany (Caitlyn's Mom)
*Beef Burritos~April (Amber's Mom)
1 lb. ground beef
1 pkg. burrito/taco seasoning
2/3 c. water
8 tortillas
1 large tomato or salsa
Your favorite toppings (cheese, sour cream, guacamole, etc.)
Brown meat in skillet, drain fat. Stir in 2/3 c. water with seasoning and bring to a boil, stirring occasionally. Reduce heat and simmer uncovered for 5 minutes. Place 2 tbsp. of meat mixture in tortilla, along with your toppings, roll up and serve.
